Spaghetti all'Amatriciana -- From the hills of Amatrice, just outside of Rome, this pasta is tomato and pancetta based. While simple and mildly spiced, this pasta packs a ton of flavor.
Spaghetti alla Paulina -- This Sicilian vegetarian pasta highlights Moorish influences in Italian cooking. Made with cauliflower, saffron, currants & pine nuts, it is a definite crowd pleaser.
Arugula & shaved fennel salad with hazelnuts, mint & pecorino.
