Broccoli Slaw
This is a great way to use your broccoli stalks, better than the compost bin and if you have never used them before you will after you make this. This is a great dish to take ot potlucks too, it does not get soggy and has a great fresh flavor that goes with a lot of mains.
For the Slaw
1 large head broccoli, 1 lb
1 cup shredded carrots
1/2 cup thinly sliced red cabbage
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro or parsley
1/4 cup sunflower seeds or sliced almonds (optional)
1/4 cup dried cranberries or raisins (optional)
For the Dressing
1/3 cup mayonnaise or Greek yogurt
1 tbsp apple cider vinegar or lemon juice
1 tbsp honey or maple syrup
1 tsp Dijon mustard
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
Remove stem from broccoli, peel off tough outer layer and julienne. Break or cut broccoli heads into small florets.
In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, garlic powder, salt, and pepper.
In a large bowl, combine broccoli, carrots, red cabbage, green onions, and cilantro.
Pour the dressing over the slaw and toss to coat evenly.
Stir in sunflower seeds and dried cranberries if using, let sit for 10-15 minutes to blend flavors before serving.
