Cauliflower Fritters w Red Pepper Sauce
Cauliflower Fritters with Roasted Red Pepper Sauce
These fritters are amazing, and even more amazing is the red pepper sauce that goes with them!
1 head cauliflower
1 eggs
1 cup panko
1 cup sharp cheddar cheese, shredded
½ cup milk
2 tsp onion powder
2 TBSP olive oil
Break cauliflower into florets. Put a half an half inch of water in a saute pan, add salt and cauliflower. Cover and simmer until water is absorbed and cauliflower is soft, about 10 minutes.
Place cauliflower in a large bowl and add egg, panko, cheese, milk and onion powder.
Form into balls, a little larger than golf balls and slightly smash.
Place oil in a large saute pan over medium heat. When oil is hot, carefully place croquettes in one at a time, being careful not to crowd the pan. Cook for 5 minutes, flip over and cook another 5 minutes.
Drain on paper towels. Serve warm with roasted red pepper sauce or marinara.
