Celery White Bean Salad w Blue Cheese

The best thing about this salad is everything.

You know when you were little, or maybe still, you save the best thing on your plate for last? Well, I find myself doing that with this salad, I stopped at Gabrielle Hamilton’s Prune in NYC one evening on my way to dinner elsewhere… I had a couple days in the city and although a full dinner was not on the docket for this trip, I popped in for a little appetizer. There was a seat at the cute little bar, where I drank a delicious Gruner and had a salad much like this, but almost more like a bruschetta, served on a delicious piece of toasted bread. I could’ve sat there all evening soaking up the garlicky dressing with that bread! That being said, this salad was born out of the necessity to have a similar dish in my fridge, at all times!

4 radishes, diced
4 stalks of celery, diced
1/4 cup Italian parsley, stemmed
1 cup cooked white beans
2 TBSP blue cheese
3 TBSP olive oil
1 TBSP red wine vinegar
Salt
Pepper
