Chipotle Pimento Cheese Dip
A great addition to your app platter, an all time favorite!
2 cups sharp cheddar cheese, shredded
4 oz cream cheese, softened
1/2 cup mayonnaise (or Greek yogurt for a lighter version)
1/3 cup diced pimentos (drained)
1–2 chipotle peppers in adobo sauce (adjust to taste), minced
1–2 teaspoons adobo sauce (from the chipotle can)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt & pepper to taste
A squeeze of lemon juice for brightness
Instruction:
In a mixing bowl, combine cream cheese and mayo until smooth.
Add the flavor – Stir in shredded cheddar, diced pimentos, chipotle peppers, adobo sauce, garlic powder, onion powder, salt, and pepper.
Blend (optional) – For a smoother texture, pulse everything in a food processor for a few seconds.
Chill – Refrigerate for at least 1 hour to let the flavors meld.
Serve – Enjoy with crackers, fresh veggies, on burgers, or in sandwiches!
