Spinach Quiche

6 eggs
½ cup milk or cream 
4 shallots, sliced
2 cups spinach
1 TBSP butter or olive oil
1 cup Gruyere cheese, shredded or sliced thin
Pinch nutmeg
Salt
Pepper
One 9” frozen pie dough

  1. Preheat oven to 375F. Bake the frozen pie dough until fully cooked. If it puffs up just poke with a fork.

  2. Heat a saute pan to medium, add butter and melt. Add shallots and cook 5 minutes. Add spinach and salt, cook until softened.

    Beat eggs in a bowl with cream, nutmeg, pepper and salt. Pour eggs into baked pie dough, add cheese. Bake 45 minutes, the eggs should be puffing up a bit when done. Enjoy warm, cold or room temp!
