The Pesto Sandwich

I have spend a lot of money on takeout sandwiches, and they are so easy to make at home! The key is good bread and quality ingredients. A great tip is to make sure you do not use ingredients that will make your togo sandwich soggy, and carry the dressing on the side.

Ingredients (Makes 2 Sandwiches):

  • 4 slices of crusty bread (such as ciabatta, baguette, or sourdough)

  • 2 tbsp pesto (store-bought or homemade)

  • 4 oz fresh mozzarella, sliced

  • 8 slices prosciutto

  • 1/2 cup roasted red bell peppers, sliced

  • Fresh basil leaves

  • Balsamic vinegar

  • Olive oil

Instructions:

  1. Slice the bread into 4 equal pieces if using a baguette or leave the slices as is if using ciabatta or sourdough. Slice the mozzarella .

  2. Spread a generous layer of pesto on one side of each slice of bread. On the bottom slice of each sandwich, layer the mozzarella slices, prosciutto, red pepper and a few fresh basil leaves .

  3. If you prefer a warm, crispy sandwich, heat a pan over medium heat. Lightly brush the outer sides of the bread with olive oil and place the sandwiches in the pan. Press down slightly and toast for 2-3 minutes on each side until golden brown and the cheese is slightly melted.

  4. Once toasted, slice the sandwiches in half and serve immediately.
