Umeboshi Toasted Pepitas

These toasted salty seeds are a crowd pleaser for sure! Eat as is, sprinkle on a salad or even granola for a good sweet and sour twist. One of my favorite snacks it to mix with some chocolate chips :) Easy to make and even easier to enjoy.

1 cup raw pumpkin seeds
Umeboshi Vinegar

Heat the pumpkin seeds single layer in a pan on medium high heat. Stir every few minutes until the seeds start to puff up and become fragrant. This may take 7-15 minutes. When they are done turn heat off and generously sprinkle with ume vinegar. '
