Garlic Pasta

I love the simplicity of this dish, you get to taste all of the flavors! Pop in some Italian sausage or burrata if you wish to make it a bit more filling, or swap out the basil for a different herb, like oregano or tarragon to change up the flavor. Enjoy this go to!

1 cup cherry tomatoes
5 cloves garlic, sliced thin
1/2 cup olive oil
1/4 cup pasta cooking water
Salt
Pepper
Red pepper flakes
2 TBSP shredded basil leaves
1/2 LB spaghetti
Parmesan to top

  1. Cook pasta according to directions, saving 1/4 cup of the cooking water.

  2. Heat a pan to medium low and add olive oil, garlic and cherry tomatoes, salt and let cook slowly about 7-10 minutes, until the cherry tomatoes begin to burst a bit. 

  3. Stir in the pasta and pasta water.

  4. Portion into two bowls, top with red pepper flakes, basil and pepper. Serve with parmesan.
