Peach, Cheese and Prosciutto Skewers

These are so fun and different, they will be loved by all! Bread cheese is the cheese used here, but you could use halloumi or any other grillable cheese. The peaches can be a tad underripe, which is great when you just want those peaches but they are not quite ready! Mix and match, add more peaches or cherry tomatoes, the world is your oyster.

Peach, Cheese and Prosciutto Skewers
Makes 8 skewers

2 peaches, halved and then quartered
1 package bread cheese, cut into approx 2” triangles
16 cubes baguette, 1 1/2”
1 red bell pepper, diced into large pieces
8 slices prosciutto, cut in half
1 small red onion, quartered and layers pulled apart
Olive Oil
Sea Salt
Honey
Fresh Herbs
Skewers, soaked in water (to help prevent burning)

  1. Get grill going to medium flame.

  2. Make all of your skewers, you can choose the layering but careful with the cheese, it can break when cold.

  3. Place them all on a platter and drizzle with olive oil. Place on grill and let grill a few minutes, turn and grill more. 6-12 minutes in total, depending on your grill. You want your bread and veg getting toast and your cheese getting melty.

  4. Remove and place on a platter, drizzle with honey fresh herbs, salt and more oil.

  5. Enjoy!
