Watermelon Salad

This light and delish salad is amazing for a cooling side.

1 small watermelon, about 4-5 cups when cubed
1/4 cup very thinly sliced red onion
½ cup mint
¼ cup olive oil
½ cup goat cheese, crumbled, can also use feta
1 lime, juiced
Salt
½ cup pumpkin seeds to top

  1. Cube watermelon, cutting off rind

  2. Mix oil, lime juice, salt and mint in a bow, toss in watermelon and red onion.

  3. Top with goat cheese and chill until serving.
